Chicken Skewers Salad
Ingredients:
- Chicken breast, cubed
- Mixed greens
- Cherry tomatoes
- Cucumber
- Red onion
- Olive oil
- Lemon juice
- Salt and pepper
- Herbs (e.g. oregano, thyme)
Instructions:
1. Season chicken cubes with salt, pepper, and herbs
2. Thread chicken onto skewers
3. Grill or pan-fry skewers for 12-15 minutes, turning occasionally
4. Prepare salad with greens, tomatoes, cucumber, and onion
5. Dress salad with olive oil and lemon juice
6. Serve skewers over salad
