Healthy Greens Bowl Chicken
Ingredients:
- Chicken breast, sliced
- Mixed greens (spinach, kale, arugula)
- Cherry tomatoes
- Avocado
- Quinoa or brown rice
- Cucumber
- Red bell pepper
- Olive oil
- Lemon juice
- Salt and pepper
- Herbs (e.g. thyme, rosemary)
Instructions:
1. Cook quinoa or rice according to package instructions
2. Season chicken with salt, pepper, and herbs
3. Pan-fry chicken until golden and cooked through
4. Wash and prepare all vegetables
5. Arrange greens in bowl
6. Top with quinoa, chicken, and vegetables
7. Drizzle with olive oil and lemon juice
8. Season to taste
